Multi-hit bullet hells

U.N. Squadron also had something like that, where you could take multiple hits. Your health bar would decrease, depending on how much damage you took, and would eventually heal if you took no more damage for a period of time. It was basically a critical, where if you were hit during the critical stage you would die. Made for a lot of fun (one of my favorite bullet hells).

I would also say Zombies Ate My Neighbors is another fun (psuedo)bullet-hell that had a health function. You could pick up health packs you could use at later moments. It wasn't like the traditional bullets-all-the-time games, but did incorporate some of the same aspects.
